Dandelion

The common dandelion is a hardy, edible perennial of the daisy family, recognisable by its toothed leaf rosette and single golden flowerhead that matures into a spherical seed clock.

Overview

The common dandelion (Taraxacum officinale) is a perennial herb in the family Asteraceae. It grows from a deep taproot and is one of the most widespread flowering plants in the temperate world.

  • A basal rosette of deeply toothed leaves
  • A single yellow composite flowerhead on a hollow, leafless stalk
  • A round white seed head ("clock") of wind-borne parachutes

Uses

Every part is edible: young leaves as bitter salad greens, flowers for wine, and roasted roots as a coffee substitute.
